INGREDIENTS

1 cup of walnuts
2. 1/2 cup powdered rock sugar
3. One tablespoon cucumber seeds
4. Half a teaspoon cardamom powder
5. Saffron flakes
6. 1 teaspoon coarsely chopped dates
7 Tablespoons Milk


DIRECTIONS

1. Soak walnuts for 15 minutes in hot water or for 2 to 3 hours in regular water.
2. Remove the walnuts, drain the water, and wipe the surface with a cloth. These walnuts should be coarsely ground with cucumber seeds.
3. Add milk, rock sugar powder, cardamom powder, and saffron to a skillet and toast ground walnuts for 5 minutes (without ghee). Cook for 10 minutes on a medium temperature. Continue to stir constantly.
4. Extinguish the flame and add the dates.
5. Serve it hot and garnish it with pumpkin seeds and dates.

DUDH  PULI





INGREDIENTS

1. Two cups of desiccated coconut (unsweetened)
2.Condensed milk, 2/3 cup
3 cups of milk
4. 2 to 3 little cardamom
4. 5. 2 to 3 cinnamon sticks (1 inch each)
2. Cups of rice flour
7. Water, 1 Cup
Salt, 1/8 teaspoon
9. Milk, 4 Cups
1 cup of sugar
11. 3 to 4 little cardamom
13. 3 to 4 cinnamon sticks (1 inch each)

DIRECTION

Filling with coconut:

1. In a nonstick pan, combine coconut, condensed milk, and ordinary milk. The mixture must be somewhat fluid but not completely sticky.

2. Include cinnamon and cardamom. Until the mixture gets slightly sticky, turn on the stove and whisk continuously.

DUMPLINGS:

1. Salt the boiling water.


2. After turning off the burner, mix the hot water with the rice flour to create a dough that is firm but not sticky.

3. If you press on the dough with your finger, it should spring back. Adapt the flour as necessary. Good kneading takes around five minutes.

4. Roll out a portion of the dough. Using a cookie cutter, create circles.

5. Sprinkle a little coconut filling over each circular. To create a crescent-shaped seal, wet the edges of the and press firmly.

6. To cook the dumplings, combine 4 cups of milk, cinnamon, and cardamom in a nonstick skillet and bring to a boil.

7. Stir sugar into the milk that is now heating.

8. After that, add the dumplings and simmer them at medium-low heat for 10 to 15 minutes, or until they are done.

9. It is available hot or cold. Add chopped pistachio and brown coconut as a garnish.


 KHEER   SABUDAANE 

   

Ingredients:

1. 5 ounces of sabudana (Sago Pearls)
2.  Milk, 4 Cups
3.  4 Tbsp. Sugar
4.  14 teaspoon powdered cardamom
5. 5 Cups of Water

Direction

1. Rinse the sabudana under running water. Sabudana should be soaked for two hours.

2. It will nearly completely absorb the water, growing in size.

3. In a heavy-bottomed pan over medium heat, warm the milk.

4. Add the soaked Sabudana when the milk begins to boil. Cook them for about 10-15 minutes, stirring frequently, until they become transparent and soft.

5. Stir in sugar and allow it to dissolve. Add the cardamom powder after reducing the heat.

6. Cook the milk until it thickens while stirring constantly. It will probably take 5-7 minutes.

7. Switch off the heat and pour the finished Sabudana Kheer into a serving dish.

8. Add sliced almonds as a garnish and serve warm or cold.


    COCONUT LADDU



Ingredients:

1. 1/2 cup of khoya
2.  1 tablespoon Ghee
3.  15 to 30 Cashew
4. 10 to 15 almonds
5. 1 1/2 cups of coconut desiccated
6. One cup of condensed milk


DIRECTION

1.  Place khoya in a skillet.

2.  Thoroughly saute it to melt it and create a paste.

3.  Place some ghee in a skillet and roast the cashews until they are golden brown.

4.  Then came cashews. Almonds should be roasted until golden brown.

5.  Next, put desiccated coconut in a pan.

6.  After cooking it until it is light brown, add condensed milk.

7. To make a thick paste, thoroughly combine them.

8. Stir well after adding khoya paste.

9. Roll the paste into small, spherical balls.

10. Fill the coconut ball with almonds and cashews that have been roasted.

11. Roll the coconut balls in the dried coconut that has been roasted.

                            MAKHANA KHEER


Ingredients:

1. lotus seed hulls
2. Ghee, 3. 1/2 cup of cashews
3. 2 tsp Ghee
4. Salt rock
5..5 teaspoon cardamom
6 cups of milk
7. Sugar
8. Finely sliced dry fruit


DIRECTION


1. Heat some ghee in a skillet while roasting the seeds and some cashew nuts. Add rock salt to taste.

2. Right after it has cooled, take 3/4 of the mixture and combine it with some cardamom.

3. Bring 2 to 3 cups of milk to a boil in a separate deep pan.

4. After adding the sugar, thoroughly whisk in the ground makhana mixture.

5. Include the remaining cashews and roasted makhana.

6. Keep swirling until the mixture thickens.

7. Dry fruit garnishes can be added to the kheer before serving it hot or cold.
